This was the family dinner mantra. If you did not eat fast, seconds or thirds of the delicious food served were not a likely choice. Mom moving from hot stove to putting food on the table was often in a constant state of motion. The smell of roasted chilies, tortillas and beans permeated the house hours before the call to dinner. Dinner was a gathering where stories were told, blessings were given, and sarcastic comments were flying. All centered around meals that were proudly prepared by my mom,

...to help prepare these meals started from a young age. I remember Mom Hilda coaching me on filling the tortillas with the right amount of cheese and chicken and then rolling and stacking them on trays and pouring sauce and adding more cheese. There was a right way to do everything and always a secret ingredient to every recipe. Never were there measured amounts... only tasting and adding to get the perfect flavor. I would follow mom around with a notepad writing ingredients for recipes. My collection of family recipes has ingredients listed with no measurements. The family recipes would be kept secret to this day if I had not decided that my mother's treasured meals should be shared for others to enjoy.
These three things cannot be separated from my fondest memories. Our home was filled with people from all walks of life during the holidays, celebrations or drop by visitors. The relationships brought the people, but the food kept them coming for more. Savory and healthy food made from fresh ingredients has been something I have enjoyed all my life. Unfortunately, the time to prepare such meals becomes more and more challenging. My goal in creating HaLaLa Enchilada Sauce was to continue the traditions of great gatherings centered around savory healthy food while spending less time preparing them.
